Crispy Bruschetta with Goat Cheeses, Tomatoes and Mint
Toasts and tomatoes may be prepared an hour ahead of time, covered separately and kept at room temperature until needed.

Ingredients:
12 (1/2 inch thick) slices of Italian or French bread
3 Tbs. olive oil
1 garlic clove, halved
6 plum tomatoes, seeded and chopped
1 tsp. fresh lemon juice
4 ounces soft goat cheese
3 Tbs. fresh, chopped mint
Directions
Preheat oven to 325°. Arrange bread slices on a baking sheet. Brush olive oil over both sides of bread. Bake bread until golden, about 6 minutes per side. Remove toasts from oven. Raise oven temperature to 350°. Rub cut sides of garlic over toast. Combine chopped tomatoes and lemon juice in a bowl. Season with generous amounts of salt and pepper; toss to combine.
Spread goat cheese on toasts and arrange on the baking sheet. Mound tomatoes on toasts, dividing equally. Bake until heated through, about 8 minutes. Transfer bruschetta to platter; sprinkle with mint and serve.
